Anyone else still have doubts Zelda will come to Wii U?

It's 100% coming to Wii U.
Whether or not the NX is launched next year and it's a dual release is the other question.

And if the NX isn't until 2017 they should definitely make a remastered version for the NX like GTAV, TLOU sit for PS4.
