In the commentary for one of them (I think it was Attack of the Clones) Lucas said that in the original trilogy, all we ever saw was an old Jedi, a crippled Jedi, and a Jedi that was barely trained. In the prequels, we get to see Jedi in their prime.
I know the originals were grittier fights (in Empire, Vader was just toying with Luke, though) but I always liked seeing Jedi do amazing and impossible things in the prequels. I though the final battles with Dooku were amazing and the battles in RotS were even better. My biggest gripe? In Sith, the high ground pretty much won the battle for obi wan. In Phantom Menace, it was the opposite! It should have been consistent.
