It's quite simple. Folks who join provide me with their Steadm address, email, or other method of accepting a gifted game. They also tell me if they want to use Steam, GOG, or both, as well as if they have any specific wishes (games, genres, etc).
After that, I randomly assign folks to give someone a gift to. You will receive a gift from one person, and send a gift to another. The actual gifting process is also very easy: you put a game in your cart, go to checkout, and select the 'this game is a gift' option, so it gets sent to the other person's account. If any issues arise (they usually don't), folks let me know and we get it all sorted out; we've been doing the secret santa thing since 2008, and so far there haven't been any major issues.
