First of all, there are much more difficult games than the Nintendo ones you listed. Those are actually quite easy.
Second, I guess you have the right to your opinion. But just because you lack the skillset/coordination and/or motor skills to play and complete a difficult game doesn't mean that everybody does.
A quick look at the millions of Souls/Bloodborne fans we have shows that people enjoy the challenge.
