Nintendo can't even release a mobile game on time

This mobile game wasn't announced for people like you, and was mostly announced to investors. A delay in this mobile game has little to do with you.

As for the other games, Nintendo rarely delays its games. Zelda U is new for them, they never made an open-world game before. Star Fox is an exception. What else is bothering you?

Why do I need more when those were the only 2 games worth getting this holiday season?
