Veggies aren't the most useless thing you can eat, it's the complete opposite. The way how modern food is refined, it lacks most of the nutrients that are hard or impossible to have elsewhere if you do not eat organ meat. Fruits are much lower in nutrients than veggies. I typically eat between one and two kilograms of veggies a day, which is 50-100 grams of carbohydrates.
But you're right about eating too little selfcooked stuff and all the stuff that's used to replace fat with.
