Calling WWHD remade from the ground up is exagerating. It has updated models and textures, but they certainly don't seem remade from the ground up.

Remade from the ground up:

Windwaker HD

To use R&C as an example again, Windwaker is more akin to this:

The models aren't updated at all. The cleaned some textures, upped the resolution, changed the lighting engine, added gamepad functionality, and added some little tweaks to gameplay. Apparently they updated the soundtrack, but I can't hear the difference at all. Love WWHD, but the remake was just Aonuma flexing the Wii U hardware a bit.

The differences in the music in WWHD were basically just instrument upgrades - some of the orchestral stuff sounds a bit more realistic.  One song that actually has a new part added is Tower of the Gods - there's a choir part that wasn't there in the original and it weirds me out every time i hear it.
