Apple doesn't care about the console market. They've always viewed it as a market for juveniles, Steve Jobs never liked video games.
The profit margins aren't high enough to be worth Apple's time either. Game consoles make OK money, but not huge dollars, like XBox is peanuts for Microsoft.
That said if they really needed to, there's nothing magical Sony or MS do that Apple couldn't and they could outmarket both of them easily.
