Because the older 2D ones had to be done in a more cartoon pallet. This is basically what Minecraft does. How do I represent grass. In 8 bit style. But at the same time, feel like i'm in, a lack of better term, a cartoon. He did the reverse. OOT Doesn't use that pallet anymore. It went for more acurate shadowing and colors. Just keep refining that more and more. You reach this. You can still have the universe styles in this enviroment. A tunic, is a tunic. Pointy ears, are pointy ears.
