Basically, Fate/Stay Night has multiple versions of the main plot line surrounding the Holy Grail War. In the main line right now, there is Fate/Stay Night, no subtitle, which was the first series that focuses around the latest Holy Grail War. The most recent release was Fate/Stay Night: Unlimited Blade Works, which received a movie which was turned into a full, expanded 24 episode anime. This one is basically an alternative storyline to the original Fate/Stay Night. There is a prequel series, which is Fate/Stay Zero. Technically, Fate/Stay Zero spoils aspects of Fate/Stay Night, but Zero is vastly superior to the first series in terms of animation quality, action, and storytelling. Unlimited Blade Works is a good followup to Zero, as they share quality, although UBW does have its share of issues pointed out by another user. It's still great, regardless.

Finally, there is a completely different series featuring the same characters called Fate/Kaleid, but that is basically a magical girl anime that is a surprisingly fun watch. It has an entirely different tone and animation style compared to the other three series.

That's all kind of the reason I haven't already watched it. So many titles/subtitles and alternate storylines and what not. Wouldn't know where to start

I recommend: Fate/Zero -> Unlimited Blade Works

Alternatively, since it might be hard to go back to the original series after experiencing the high quality of the later ones: Fate/Stay Night -> Fate/Zero -> Unlimited Blade Works

Kaleid is good if you want something less dramatic. Just be aware that it is nothing like the three aforementioned series.
