Orihime's feelings for Ichigo are the only thing that are canon, everything else is just speculation. Ichigo, at this point, has barely shown any interest in the opposite sex expect when he's being teased by Matsumoto and Yoruichi. I personally don't mind if IchiRuki happens, I just don't think it will though. Like I said, Kubo could have easily written out Orihime's feelings for Ichigo during the timeskip, but he didn't. In fact, he brings it up even more now. I just don't see the purpose of repeatedly bring them up if they aren't going to amount to anything. It's kind of like how Hinata's feelings were always in the background and Naruto was oblivious to them, but they ended up together.
There's also the fact we don't really know where Ichigo is going to end up by the end of the series. If he's required to live out the rest of his life in Soul Society because he's too dangerous to be among normal humans then IchiRuki obivously has a better chance. However, if he can continue to live with his family and friends in the Human World, I don't see how Rukia and him could honestly have a relationship. He'll soon be going to college and Rukia is the Vice-Captain of the Thirteenth Division. They'll both have huge responsibilties that will make a "long-distance" relationship hard to manage.
