There is no deliberate delay of the game to allow it on EA Access first. The "delaying" of the game that you speak of is the time it takes to produce and distribute the physical products so that they can have digital and physical release same day. Here is how it works:
Step 1: Game gets made then "goes gold" indicating it is complete and ready to be played.
Step 2: Game then gets printed to discs. Meanwhile, the digital version continues to be playable, but isn't released. This is so that brick and mortar stores don't lose their shit and then eventually go out of business (for now anyway).
Step 3: EA Access allows for consumers to play the game a few days prior to it's actual release.
Step 4: Discs arrive at retailers and the digital version goes up on all available digital storefronts.
So no, there is no conspiracy to keep the game out of your hands so that others can have it first. It is simply a publisher giving their fans an option to try the game before they spend the money on it, for a fraction of the cost of the game itself.
