I'm slightly embarrassed to say I've seen 35 of these - some of them great, some awful, most pedestrian.

I think things started to turn around in 1998 with Blade and really broke through in 2002 with Spider-Man. The highlights for me are Blade II, X2, Spider-Man 2 (still my pick for the best superhero movie), Iron Man, and The Avengers.

And while things are obviously much better now than they were in the 80s and 90s, I worry about Disney's vision for the Marvel Cinematic Universe. Building worlds and introducing new characters is fine, but in the end what I want are discrete movies, each with a fully-formed beginning, middle, and end.
