Well I'm no trainer but the concept made sense to me. These are wild animals being trained. They were trained for years to go after a scent and to follow orders by Prat. The opening bunny scene kinda established that. So later in the movie, again after being trained so long to follow orders they did not go after the humans because they had a goal.
Now the guy falling in the pit was not something they were accustomed to. And just like any wild animal, instincts kick in. I mean the best animal trainers in today's world are attacked and killed if something goes wrong.
Anyways that's my opinion.
