Should I sell my Vita to save up for XBox One? If so, how much should I sell it for?

Yeah, sounds like you should sell it but wait til the holidays to grab a xbox one. There's always better deals for those consoles then. I'm not familiar with the pricing on a used vita but I'm sure the others will give ya good idea on that.
