So with Bloodborne being a commercial and critical success, Sony and From must be in talks for the next project, what should it be?

Riiiiight. The same way Dark Souls lacked the same quality of Demon's Souls. Sony helped because they wanted the exclusive, not because From couldn't make a better game without them.

From couldnt do 2 games of the caliber of Dark Souls 2 and Bloodborne simultaneously if one of them wasnt beeing funded by Sony, so ye Sony funded a game so they could have Demons Souls 2 basically and From took the money cause they could do this project with Sony while still developing Dark Souls 2 and because Miasaki loves doing new things and kinda hates sequels. 

Moving foward theyre probably gona continue releasing Dark Souls, no reason not to, the series sells well is critically aclaimed and the fanbase of Souls games is growing everyday, they may wait awhile till 3 and do somethign else before it but there will be a Dark Souls 3. The other team in the company is probably gona work on Bloodborne 2, Sony didnt finance the project and bet on a new IP so they could do only 1 game, they want a franchise, they let it slip on Demon Souls, they wont do that again now.
