It is surprising that Zelda won't be shown at E3 this year, but it could be due to the new ideas they want to implement into the game, it may be that they don't want to show the game again until it is near completion, being able to show all the 'new possibilities' they promised. You also said it your self, Nintendo is no stranger to delaying a game to give it more time to make a better game. I imagine this is the same scenario. There's no ulterior motive behind this game being delayed. Just that they want to make the best game they can. At least that's how I see it.
