Could Zelda's delay help other Wii U games sales?

No to your question, but I think it could open the possibilities of getting other games that were not considered before (I am looking at you, FATAL FRAME 5), as it could fill up a void in the lineup (september-october release?)

that definitetly could be good like with Zelda's delay we may actually get Fatal Frame for Halloween and maybe even speed up the process of Xenoblade X's localization since NoA probably not focusing on localizing Zelda right now.
