Splatoon 1080p 60fps? And If so what does this say about Nintendo's future titles on Wii U?

Is there any Wii U game that's 1080p60 without being on a 2D plane or a remake/last gen port?

I don't even think there are any on PS4 so I doubt there will be on Wii U.

No. I believe almost every game is 720p, with the exception of TWWHD (1080p30fps) and Smash, but you know.
