Do the same dev teams work on most of their games? is nintendo like Ubisoft or is it more like sony.

More like Sony, but each developer is responsible for more than one series.
EAD 1 is mostly responsible for Mario Kart (but other studios help like Retro and Intelligent Systems.) They are also responsible for Nintendogs. More developers to make another Mario Kart would cost money and/or time from other studios.
