Saturn would be interesting as I am pretty sure 99% of wii owners outside Japan never played saturn games. They will wonder why they never played them once they try out Panzer Dragoon 2 or Nights...
Dreamcast is too recent to be ported.
One idea that probably isn't too far from reality is Arcade ports. Actual arcade prots of Mortal Kombat 2, Pit Fighter, Primal Rage, Final fight...that would be killer.
