PS2: Grand Theft Auto III, Vice City and San Andreas, played them as a kid with a friend and thought they were incredible. Metal Gear Solid 3, probably one of the best looking PS2 games I think.
Xbox: Halo 2. It was my first co-op FPS and it looked pretty good for the time.
Gamecube: Metroid Prime. This game just looked stunning.
PC: Half Life 2. Still looks great today and it's been over 10 years.
Xbox 360: The Elder Scrolls IV: Oblivion. Seriously breath taking, the game that got me to buy a 360.
PS3: Uncharted 2 + MGS 4. At the time I think they were some of the best looking games ever. MGS4 got me to buy a PS3.
Bonus Round (because it deserves it) - Wii U: Yoshi's Wooly World: "Wow! This game is so cute!"
