But why should a game like Diddy Kong get top priority when Wii U already has two quality Kart racers? Retro's talents would be better spent on games that fill empty niches in their library.

While I agree WiiU doesn't need another Kart racer, filling empty niches is something you should do when you have a popular console with a lacking libaray, that was tha case of Wii and could be the case of 3DS. On WiiU though, you have to do something to sustain console sales and you have 3 options:

A. You can try expand the market with an innovative product (but It's very hard to create a game like this on a niche console, plus you need to spend a lot on marketing). Splatoon could be this kind of game, but Nintendo as always is not doing enough in the marketing department.

B. You try to please your customer base by giving them what they want. This is the easisest route, you need to develop games people are asking for like Starfox, F-zero, Metroid, Paper Mario, etc. As a result you can augment WiiU adoption rates within the actual and former fanbase.

C. You can try to attract strategic customers who spend a lot on videogames and consoles but don't own a WiiU yet. In this case you need an very high-quality game, that is not too niche. ZombiU falied beacuse it wasn't good enough in temrs of quality, Bayonetta 2 on the other hand is just too niche. In this scope Nintendo should learn from its competitors, M$ did a better job with Tomb Raider. Sony did even better, with Bloodborne they made a perfect choice by taking a very acclaimed series with a very loyal fanbase in the moment it was getting more popular, and making an exclusive new IP out of it.
