In an ideal world we'd get voice acting for FF7 on par with GTA or Uncharted, but let's realize who is in charge of this game. They seem to be deaf of what good dialogue sounds like and even IS on a logical level. You most definitely don't want voice acting for this game.
Keep the pre rendered backgrounds and fixed camera angles.
This is a turn based RPG lacking in action elements, there's no reason to give camera control and the game actually looks beautiful artistically in its backgrounds because pre-rendered backgrounds have a much more striking effect than a fully rendered 3D world given that there will be jagged textures as well as recycled textures and areas inside fully rendered worlds.
With pre-rendered backgrounds everything looks so specific and made for each area like a painting made by hand. Unless you would like FF7 to jump genres to action-RPG there's no reason for it to be a fully rendered world. And since the original isn't then that's that.
More content of course would be nice; bosses, materia, higher difficulty settings, unlockables, extras, options and optimization in general.
Keep the original soundtrack, but make it sound less retro. Certain real instruments would need to be added in place of some of the electronic parts. However, that doesn't mean the original instruments can't be used, they would just need to be cleaner while still remaining as striking. A fine balance is needed and only Uematsu should have say over the soundtrack.
Hironobu Sakaguchi would be Executive Producer and Hiroyuki Itou would direct this game along side Kitase. Itou, Kitase and Nojima would keep the writing in check.
The battle system remains exactly the same. There's no need to change anything except maybe a few English errors. Which brings me to..
The English translation needs to be improved in many parts of the game including several spelling errors.
Edit: Ah yes, of course the graphics should be as good or better than FFXV's.
