If certain consoles can't acheive 1080p now, what happens in a couple years?

LOL You think? I used to say the same thing you said until I played Killzone's storyline and then played the multiplayer. The drop from 1080p in the campaign to 900p destroyed my eyes, but eventually they got used to it.

I own both 1080p and 720p games, and switching between them, the difference honestly just isn't a game changer to me.

I know it is for some people, and that's fine, but to me it's pretty marginal.

480p to 720p, now that was a big jump. Not that that stops me playing and enjoying 480p games; I still regularly fire up my Wii, and no sign of eye cancer yet, though I keep regular appointments just to be sure, with all the reports of it going around... ;)
