Look a Nintendo's past catalogue; besides Wind Waker HD they have always targeted 720p, because it's easier to achieve on Wii U without sacrificing detail.

Honestly, I'd rather it looked fantastic at 720p than decent at 1080p. Resolution isn't everything.

Oficcial screenshots were in 1080p and I wouldn't doubt the zelda team.
