I've only played the Genesis games extensively. Sonic never felt "fast" to me, it was actually kind of slow. I'm sure really skilled players could get through stages quickly, but as speedrunners just abuse glitches to clip all the way through the game, I've never seen evidence to support this theory.
I like how the old Sonic games incorporate a lot of vertical platforming, something Mario doesn't have a lot of. The later levels also tend to have multiple pathways you can take, which makes replaying them more fun. My favorite levels feel 'layered', with a high route and a low route that intersect at points, allowing you to mix and match, pass from one to the next. Mario levels are very horizontal by comparison, and although many have underground 'shortcuts' by way of pipes (or aboveground by way of vine/clouds), the transition feels very solid and it feels more like a shortcut than like one of multiple 'branches' of the level.
The direct tradeoff is that Sonic games have far fewer levels than comparable Mario games.
