As far as rpg's go, you really can't get more accessible than Final Fantasy (other than Pokemon and the Mario RPG's). FFVII is really easy. FFVIII's mechanics can be broken wide open if you know what you're doing, but I definitely wouldn't recommend it for a casual player. FFIX begins kinda hard, but then it just gets easier and easier.
Like someone said, The Legend of Dragoon is also a FANTASTIC rpg too. Legend of Mana is also EXTREMELY accessible, but the game's design is really hit-or-miss (it's basically a collection of sidequests).
Oh, there's also Symphony of the Night. Can't believe I forgot that.
