Capcom must be the company with the most recognizable mascots after Nintendo.

I disagree with this. Disney, Warner Bros, and Sega all come out ahead. Everybody recognises Sonic, only some recognise Mega Man (and a few would probably accidentally call him Bomberman). Pac-Man is also much more recognisable, which puts Namco Bandai ahead of Capcom on this measure, too.

And while fighting fans will recognise Ryu, Ken, etc, they would equally be able to recognise Sub Zero, etc, and Mortal Kombat is probably slightly more recognisable to the general public. Since MK is now owned by Warner Bros, this puts WB well ahead of Capcom on all measures.

Mind you, a Capcom vs Nintendo game would be interesting. But if you're purely looking for the company that would best be able to pair off against Nintendo in a direct-crossover fighting game, Capcom just isn't the best choice. The main benefit would be that it would be the Street Fighter guys making the game, not the Capcom IP being used.
