I think you should do it in the same channel, just with another sub section. If your channel was called "Wii U guy" or "Wii U only", then it would be a different story and you should start a new channel. But with a common name you should focus everything on one channel and just create separate shows like you did with the PC reviews.
I think you are probably thinking about PS4/X1, but it would be nice to see some old school reviews for some hidden gens from the past too (Kid Chameleon!!).
Just one more thing: keep the 5 minute format for the videos that you use on the Wii U Five (except in special cases). Everyone hates long videos and PS4/X1/old-school reviews with short leng are just perfect.
