I'd say that a big part of the appeal of the Wii U SKU is twofold: 1) Off-TV Play and 2) Having the GamePad resemble an F1 steering wheel including the touchscreen.
What's ironic about all this is that the reason for the Rayman Legends delay (the fact that Ubisoft weren't happy with the amount of Wii Us in homes) should be a reason for delaying the Xbox One SKU in this case even if you ignore the fact that Forza is going to be coming out around the same sort of time. The Xbox One has been a flop so far (it's only been doing 'okay' in the States and has been an unmitigated flop in Europe so far), they would be better off releasing all 4 SKUs of the game next year after Halo increases sales and people have had enough of Forza, Drive Club etc.
So they've decided to release it in November (competing against CoD, Assassin's Creed Unity, Forza, Drive Club, Halo) on a console that only has (imo) an installed userbase of 4.5m at this current moment in time, and decided not to release the game on a console that doesn't have a great deal of competition as far as high profile third party titles goes, has only one major first party title (SSBU) releasing around that time, has a far superior installed userbase currently and doesn't have another racing sim available on that platform at all.
If I had invested in this crowd funded project expecting to gain proceeds from profits I'd be a bit pissed off at the moment tbh.
It's not going to sell a great deal on the PS4 and One and they've now completely killed off the chances of getting any decent sales of the Wii U SKU.
They would have been better off releasing this in February for all platforms.
