You're paying for the game in full. You play it as it's being built. Normally, the game wouldn't be put up for Early Access if it's not at least in a playable state. The game gets updated damn near every other day because you're playing the game as it's being built. When the game is completed you'll be playing it in its complete form because of all of the updates.
OT: If you don't like this idea... don't buy. It's not as if you HAVE TO get the game early. This just makes it easier for dev/publishers to fund their games. And I do not think this should be free because you're not playing a demo or some fraction of a product. You're playing the entirety of what exists of the game.
