I haven't played all these games or finished all of them as some of them are freaking hard, but here it goes
Zelda 1 -> introduced the adventure concepts of exploring dungeons and such
Zelda 2 -> redid the system to a super challenging side scrolling style of dungeon crawling
Zelda Ocarina of Time -> introduced a patent office worth of original concepts for 3D gaming
Zelda Majora's Mask -> First game to give characters a daily routine to follow every day
Zelda Wind Waker -> Open world ocean exploration
Zelda 4 swords -> controls 4 Link's at once.
Zelda Twilight Princess -> Transformation to a wolf character, first to use motion controls
Zelda Skyward Sword -> Flying exploration, 1:1 motion control of sword
This just covers the obvious stuff I can remember off the top of my head. Lets not forget the smaller things introduced in each game like the twin grappling hooks in twilight princess and various other unique features.
