The main thing you save in Rayman are lums. They were never assigned a gender.
Everybody pretty much is trapped in Rayman at some point (look at the series as a whole) including Globox, the Princes etc. You have to rescue male characters too.
Rayman Origins' purpose was to revisit the original title from 1995. But those fairies give you your powers, therefore without female characters, Rayman is also useless and weak. Surely that alone would be justification to want to lock up the fairies?
Could some of them have been male? Yes, though it is a traditional view that a fairy is female in gender. (zelda etc all the fairies are female apart from Tingle who was a token character in one main Zelda game and not really actually a fairy).
