It was out of stock in all major retailers, and Nintendo's stock of refurbs ran out. Hard to sell consoles that don't exist.

Bundles ran out, not the actual WiiU's. Any word on if Nintendo plan to create more?

Nintendo have a lot of surplus stock as admitted in their financial statements last Q.
