I'm actually afraid the world will be too big. Skyrim is boring as shit and the fact that you need a horse doesn't bode well in my opinion.

I'm still playing Modded Skyrim on my 5-6 playthough.
Skyrim should always be played on a PC.

What exactly do mods add gameplay wise that make Skyrim not boring.

Patrols that wander around and fight bandits, vampires and warewolfs. Bandit that fight each other. Animals that fight each other. New fortresses and barracks. Animals in packs. More vegation to make the world look less empty.
that's just to name a small few.
have to be careful when low level. Can't just run up and fight anything you see. See flashy lights in the distance, go other direction. 9 times out of 10 its some patrol fighting or dying by some vampires that will kick your ass.
