Have you actually played Super Mario 3D World and Mario Kart 8..? Really doesn't sound like it. The PS3 and 360 couldn't possibly reproduce the likes of them without downgrades in poly count for the models, disabling v-synch and downgrading the lighting.
Both Super Mario 3D World and Mario Kart 8 are deceptively throwing around A LOT of polys. Each playable character model is high poly, the enemy models/karts are high poly models, the large enemies and large animated models are all high poly and the Double Cherry power up throws in even more polys into the mix.
Just have a look at how damned ROUND everything is. The models in Mario Kart 8 aren't as impressive as the ones in Super Mario 3D World for obvious reasons but there's still a VERY impressive amount of polys being thrown around all the same.
You really need to get this nonsense that the Wii U has '7th gen' tech out of your head, the GPU and CPU are brand new custom made chips. Latte has a DX11-equivalent feature set for starters and Espresso isn't, contrary to popular belief, 3 x Broadways duct-taped together.
Like I've already said, what we've seen from Super Mario 3D World, Mario Kart 8, Xenoblade Chronicles X and Bayonetta 2 shouldn't be possible. There's A LOT more going on under the hood that we're completely unaware of.
Project CARS is going to be the litmus test, it's the first third party title for the Wii U where an equal amount of effort has gone into it compared to other versions. It isn't going to look as good as the other versions but it isn't going to look a generation apart from them either.
