Definitely adult Link. I think The Legend of Zelda works much better with a darker tone - Twilight Princess is my favorite Zelda - and a darker tone works better with adult characters. Most people agree with me; look at the reactions and sales of Wind Waker (4.5 mil) compared to Twilight Princess (8.5 mil).
I like what they're doing rith now with more cartoony Zeldas being smaller adventures on handhelds and more realistic Zeldas being grandiose adventures on consoles. It matches the target demographics of each type of Zelda.
