I highly recommend that you just go into PS Store and buy FF7 for PS1. You won't regret it, the graphics aren't X but the story and gameplay, exploration, music, and other things put it at the top of FF for me. But then my brother bought it when it was new, I didn't understand much English back then but I always thought the game felt so interesting.

Around five years ago I finished it for the first time, it is fantastic from start to end. There were two bosses around the middle of the game I struggled with, but eventually I beat them.

 

Tl;dr version: Buy Final Fantasy VII first. You won't regret it.

I won't compare it to newer installments, they're all unique in their own rights.

I'm not sure this is at all relevant anymore because this was quite a bump, but if we're really going to recommend games not listed, I'd advise him to get VI instead. I'd say that in addition to VII, VI is most often mentioned as being people's favorite in the series, and there's good reasons for that. And personally I think VI's graphics have aged better than VII's, so... In many cases, good 2D art simply ages better than 3D art.
