Because Link is too western for Japanese gamers. They can't handle real time combat and can't process how much damage they're doing to an enemy without a bunch of numbers flying around on screen.
Oh, and Link doesn't talk, so there's no room for an emo-driven storyline that spans hours upon hours of cutscenes featuring androgynous characters of all kinds of racial stereotypes in dramatic poses.
