I agree that they could have been so much more. I'm okay with the games because I'm sure a lot of time went into creating the 3D models and attack animations. The games are also held back by 3DS hardware.
I'm really hoping that the Nintendo Fusion is real. The Pokemon games would no longer be held back by portable hardware. Game Freak could go all out with an open world, 3D models and attack animations, 360 degree movement, character customization, story, day/night, four seasons, weather, etc.
