Outside of Mario Kart it's not a big genre, so comparing to other kart racers is very limited.
Just compare MK8 water with GTA V water... and GTA V is not like a "water game" it's a big open world sandbox game you can do so many things in, so it's technically harder to achieve high graphical quality than a closed circuit racer.
I'm not saying MK8 sucks or anything, it's very cute and has good art style, but I think it's foolish to believe it's a technical wonder.
