Actually I agree with you (except for the Wii). But Crytek is a kind of bad example, on PC you don't have hardware limitation, Crysis was a tecnical achievement but you needed a beast graphics card to run it properly, on consoles they have been outdone by several developers, maybe just Farcry on the original Xbox really pushed console graphics for its time.
