What do you think? Get another 780ti or wait and get 2 880s?

This has been pretty difficult for me so just looking for some opinions from my fellow PC Chartz

Well you would probably get better bang for your buck with Maxwell. However not knowing quite what the performance will look like or even when to expect them to release it's hard to say. There are a lot of unknowns at this point.  It may not be until next year some time they roll out the big ultra enthusiest cards. New die shrin usually means lower yeilds at the start so they may avoid huge dies. They may not position the 880 or whatever the top consumer card they have at launch is called, as a replacement for the 780 Ti at all but rather at more the 780/770 price point. Which could mean you are getting cards with roughly the same performance as a 780 Ti at a lower price and TDP. In which case you would probably better off just getting another 780 Ti than two new cards, especialy if money isn't a huge concern. And given that they are still launching new top end Kepler GPUs and launched Maxwell with low end parts still on 28nm there is a good chance they go that way IMO.

On the other hand Nvidia seem to be having a lot of success with their monster insanely priced cards, and 20nm is a ahead of schedual by a month so maybe they will go for the fences with something with 2X the performance.

In other words fuck if I know, I doubt you a really having any issue running games right now with a single 780 Ti anyway so waiting shouldn't be that hard. So if I was in your shoes I would wait well keeping an eye out for any great deals on 780 Tis.
