Mostly because software and technology development has gotten that much more time-consuming in the past 10 years.
DS is a good example of why launching too soon is bad. The console really had no reason to exist until its first holiday season. Had Nintendo held back a year, it could have launched stronger and then transitioned more smoothly into the heavy hitters of early 2006 (or they could even have launched with the Lite, which was a fast-arriving redesign).
With Nintendo now slower than ever on providing software, rushing to the door with a new console would be a disaster of unmitigated proportions.
