Dreamcast is the way to go from those three options.
Saturn didn't really have anything particularly interesting
N64 had controllers with analog sticks that broke/became loose very easily.
Gamewise, Dreamcast and N64 are both fairly strong. Dreamcast is more up to date, and despite being out for a far shorter time, seemed to have more games in total than N64. My recommendations:
Skies of Arcadia
Soul Calibur
Shenmue 1 and 2
Resident Evil: Code Veronica
Sonic Adventure 1 and 2
There's also a lot of really other cool games like the Marvel vs. Capcom vs. SNK games, Tony Hawk pro skater 2, Jet set grind radio, Hydro Thunder, Rayman 2, Grandia 2, Street Fighter 3rd strike, Powerstone, House of the Dead 2, Rayman 2, Virtua Tennis, a whole bunch of SNK fighters, etc...
Also, aside from there being more games on Dreamcast than N64, Dreamcast games are way easier to get than N64 games.
