Because VGC started as a Nintendo centric site thanks to the overwhelming initial consumer support for the Wii.
The XB360 had already been on the board for a year, before VGC even existed as an entity to track sales.
And the PS3 (in terms of sales relative to the build up and hype from the PS2 sales records days) was such a big disappointment that it was assumed by most that it would be "PS3rd" for the duration of the 7th gen.
As for now, it's not really that big of a deal.
Sure, it wouldn't take more than a line or two of net code to swap the place holders so that they were 1st, 2nd and 3rd relative to market share percentages, but everyone is so accustomed to seeing Blue, Green and Red bars, why change it?
