Twilight Princess does everyting but the sword.  Twlight Princess sword only used 4 directions, SS uses 8 despite the ablity to use more (which is why it failed to actualy make use of 1:1 controls), Tenchu on Wii used 8 directions same as SS for one example.  If you want to look at other platforms, Metal Gear Rising allows actual full directional control of its blade and gives tem a use, and that uses an analogue stick.

skyward sword sword movement uses infinite direction and the battles make full use of it. answering my own question (something you didnt do): no game comes even close to doing what skyward sword does, if it's only using a regular wii mote + nunchuck.
