A few of the purple coin challenges, most notably the dreadnaught and toy galaxies. They're even harder with Luigi (and I'll add in the other "conveyor belt" coin collection - I can't recall the name of the galaxy).
Of the normal stars, I'd have to say the trash blowing up game could be maddening, and slingpod was tough.
Of the comet challenges, I had a hard time with the race against galaxy Luigi in the bee galaxy.
Lastly, I had trouble with the green-star stingray race.
