One thing to consider there is the replayability of GTA versus Assassin's Creed and the number of used sales available.
If a game like Creed is for lots of people a one-time through game, used game sales will eat into more of the sales. It's going to be way easier to find A.C. used 360 copies than PS3 ones, and way harder to find any GTA IV ones because the game will last longer.
Because of the higher install base of 360, more copies of GTA will be sold, and because it will not be resold as fast, the ratio of sales will be higher, I'd say. Who's gonna sell back their GTA on either console initially, with all of the content coming? That's one real reason developers push DLC and at strategic times if they are smart- to keep people from using used stores to eat into their sales.
Add them together (with the bonus content for 360 - I for one have both consoles and will buy the 360 version for that reason) and you figure the 360 to PS3 ratio would be higher for GTA than Creed.
Dunno if I explained myself clearly, but there is logic in there somewhere.
